This is a party-sized premix that is packed full of flavours of a holiday season, which makes it perfect for your festive gathering. Save the extra syrup to use in brunch beverages, puddings, or to mix another batch of bikinis.
Bikini Recipe
Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Cocktail (produces 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Put the listed components in a pot, bring to a light boil, stirring so the sugar melts. Then, take off the stove and let it to cool down entirely. Transfer to a clean bottle, seal and refrigerate it in the refrigerator, it will last for up to four weeks.
Preparing the Premix: Mix every spirits and syrup into one sizeable container, leave to sit for an hour, then filter it preferably using cheesecloth, so it's fully clarified.
To serve: Add 85ml of the premix to a cocktail shaker packed with ice, and agitate carefully for a minute until cold. Filter into an frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch using a quick spritz of the essential oil above the glass.
